This weekend I tried out Heidi Swanson’s Simple Tomato Soup because we had an extra surplus of tomatoes in our fridge for some reason. I always like to roast a set of tomatoes for my soups rather than using canned ones like she suggests, because roasting gives a deeper flavour.
