This weekend I tried out Heidi Swanson’s Simple Tomato Soup because we had an extra surplus of tomatoes in our fridge for some reason. I always like to roast a set of tomatoes for my soups rather than using canned ones like she suggests, because roasting gives a deeper flavour. Also, I poached an egg and cooked up some barley as toppings for the soup, but I half regret not using coconut milk like she does and skipping on the egg (although I do love egg in soups – a la Velázquez
